Smoked Bacon Chilli Fry
Absolute show stopper of a dish
Smoked Bacon with strong eastern flavours, ideally eaten as a starter but this amazing dish can also be eaten as a mains with some plain rice.
Preparation time - 30 minutes
Cooking Time - 15 Minutes
Serves - 4 people
10 Rashers of thick smoked bacon - Cut into thick strips
1 Green Pepper - Sliced into strips
1 Red Pepper - Sliced into strips
1 Yellow Pepper - Sliced into strips
1 Large bunch of spring onion - Sliced into strips
2/3 Hot green chilli's
Large Hand full of chopped coriander, stalks included
1 bulb of Garlic - peeled and crushed
2 Inches of Ginger - peeled and crushed
Tea spoon of Coriander seeds - crushed
Dark soy Sauce
5 Table spoons of your choice of oil.
This is a very unique dish as it needs to be eaten straight away. prep all the ingredients on to a large plate ready to be cooked fast.
Take large wok or frying pan and heat the oil to a very high temperature, add the ginger and garlic and cook for 2 minutes, but do not allow to over brown. Then add half of the spring onion and all the white stems, save a little spring onion for garnish. Then add the peppers and stir and the add the sliced chilli's, cook the peppers for 2 minutes and then add the smoked bacon, move the peppers to one side of the pan and allow the bacon to cook and crisp, but being mindful not to burn anything. If you wish you can remove the peppers and cook the bacon separately. Once the bacon is cooked and slightly crisp turn the temperature down on the heat and add half the chopped coriander and crushed seeds and stir, you want to wilt the coriander but not to over cook. The add 3 splash's of dark soy sauce and mix through all the ingredients. Cook for a further 3 mins and serve on to a large plate and garnish with left over spring onions and coriander.
