A unique culinary show where Sandie Vara AKA The Spice Guy will entertain, educate, and tantalise all your culinary senses.  Each experience includes a live cooking session/s where Sandie will cook and entertain whilst explaining the intricacy of the dish being made.


Whether its a celebration, private dinner, BBQ or corporate event,  each client has a bespoke menu designed to their individual tastes and requirements,  not one menu is ever the same, which makes your time with the Spice even more memorable.


This is a unique culinary  experience like no other, Sandie brings all his culinary skills and  showmanship which will leave you and your guests entertained whilst being enlightened.

1st Course upon arrival 
Appetizers
Individual crisp puri boats filled with cumin spiked cauliflower & nips with, tamarind & vodka. 
2nd Course
Starters
Smoked Bacon Chilli Fry / Ladies Fingers Chilli Fry V
Your choice of Smoked Bacon or Ladies Fingers stir fried with ginger & garlic and fresh chillies finished with dark soy and coriander.
3rd Course 
Fish Course
Turmeric & Coriander Smoked Haddock / Turmeric & Coriander Field Mushroom V
Your choice of either field Mushrooms or smoked haddock, sealed with a special marination of freshly ground turmeric, coriander and smoked garlic, then pan fried and served with a caramelised lemon and rocket leaves.
4th Course 
The palette cleanser
Mango, Mint & black pepper Sorbet
Mangos pulped and seasoned with mint, frozen to semi state and served with a 
pinch of cracked black pepper.
5th course 
The Main Event - your choice of:
Parsee Lal Murgh (Free Range Chicken)
Parsees are from Persia, and with them they brought their Arabic influences on this dish, with the use of fresh Kashmiri chillies & Coconut, translation of this dish is Red Chicken.
Pork Vindaloo
Traditional Goan dish that is influenced by the Portuguese and the word vindaloo comes from the combination of vin for vinegar and aloo from alho, which is Portuguese for garlic.  This dish is spicy hot, a stunning dish.
Annas Mangalore V
Pineapple Curry from the West coast of India, where fruit is so plentiful, they make use of it, in their savoury dishes.  Pieces of Pineapples, cooked with curry leaves, mustard seeds and finished with coconut milk.
