Hot – Pungent – Fruity
Another spice that is enormously important in my kitchen and hopefully in yours is of course Chilli powder.
When I’m looking to add some heat in the kitchen, I reach for the Cayenne chilli pepper using it to spice up dishes like curries and Con carne.
Thanks needs to go to the Portuguese for introducing chilli to India in the late 15th Century. Prior to that Indian cuisine was only using Black Pepper and Cloves to heat up their dishes.
